Turkey and Swiss Fried Zucchini Stacks pair golden breaded zucchini with thin deli turkey and melted Swiss, with creamy honey mustard alongside. If you enjoy a crisp sandwich-style lunch and have large zucchini to use, these stacks give you a way to put them to work. Drying the zucchini before breading helps keep the coating attached through frying and assembly.

Ingredients for Turkey and Swiss Fried Zucchini Stacks

  • 2 large zucchini
  • 1 1/2 tsp salt, divided
  • 1/2 cup all purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups fine dry breadcrumbs
  • 1/2 tsp black pepper
  • Vegetable oil for frying
  • 6 slices Swiss cheese, cut to fit
  • 6 slices thin deli turkey, cut to fit
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
Zucchini, flour, beaten eggs, breadcrumbs, Swiss, turkey, mayonnaise, Dijon, honey, salt, pepper, and oil

Dry the zucchini before you build the coating

Cut the zucchini lengthwise into 12 slices, keeping them 1/4 inch thick. A consistent thickness helps the slices fry evenly and gives you broad surfaces for the filling. As you cut, keep the eventual pairs in mind: slices with similar shapes are easier to press together without leaving the turkey and cheese exposed.

Sprinkle the slices with 1 tsp salt and give them the full 15 minutes before patting them very dry. Pay attention to both sides. A damp surface makes the flour patchy, and that uneven base can leave gaps in the egg and breadcrumb coating. The slices should feel dry on the outside when you start breading.

Keep the filling inside the crisp edges

Cut the Swiss and deli turkey to fit the zucchini before you begin frying. Have them ready so you can assemble the stacks while the crusts are still hot. The heat from the fried slices is what softens the Swiss and helps the stack hold together during its brief rest.

Fold the turkey inward wherever it extends past the zucchini. The recipe’s tip matters here: turkey hanging over the sides can dry out against the hot crust. Keeping the filling contained also makes the stacks easier to pick up and keeps the breadcrumb edges visible.

Fry the slices and assemble the stacks

  • Cut the zucchini lengthwise into 12 slices, 1/4 inch thick. Sprinkle with 1 tsp of the salt, wait 15 minutes, and pat very dry.
  • Stir the mayonnaise, Dijon mustard, and honey together in a small bowl. Chill the sauce while you prepare the zucchini.
  • Mix the fine dry breadcrumbs with the black pepper and remaining salt. Coat each zucchini slice in flour, then beaten egg, then the seasoned crumbs. Cover both faces and the edges.
  • Heat 1/4 inch of vegetable oil to 350°F. Fry the breaded slices in batches for 2 to 3 minutes per side, until golden. Keep the batches manageable so you have room to turn each slice.
  • While the slices are hot, place turkey and Swiss on one zucchini slice. Press a second slice on top. Repeat to make 6 stacks, keeping the filling within the edges.
  • Rest the stacks for 1 minute so the cheese melts and holds. Serve with the chilled honey mustard.

Serve while the crust is crisp

The recipe makes 6 stacks for 4 servings, with a total time of 40 minutes. Serve after the 1 minute rest, when the Swiss has had a chance to soften between the fried slices. Pressing the tops into place helps bring the filling into contact with the hot zucchini without flattening the breaded edges.

Keep the honey mustard on the side so each person can dip as they eat. The sauce combines mayonnaise, Dijon, and honey into a creamy accompaniment, while serving it separately lets the breadcrumb coating stay exposed. The source recipe gives no storage or reheating directions, so its instructions are centered on serving the freshly assembled stacks.

Questions about the coating and filling

Why does the breading have bare patches?

Check the coating at each stage. Flour needs to cover the dried zucchini before it goes into the egg, and the egg needs to reach the same surfaces before you add crumbs. Missing a spot early leaves the next layer with less to cling to.

Does the honey mustard go inside the stacks?

The recipe serves it alongside. The filling consists of turkey and Swiss, with the sauce chilled separately until serving. This also leaves the cheese in direct contact with the hot zucchini.

Why is the cheese still holding its shape during assembly?

The Swiss begins as a fitted slice and softens from the heat of the zucchini. Assemble while the slices are hot, press the top into place, and allow the stated rest before serving.
