A classic impossible pie gets its crust from a scoop of sugary baking mix made with wheat flour. This sugar free lemon impossible pie swaps that for almond flour and monk fruit sweetener, and it still bakes up with a soft bottom crust you never had to roll.
Save this recipe for later:
You don’t build the crust at all. You blend everything for about 30 seconds, pour it into a buttered dish, and the almond flour sinks while it bakes and settles into a tender layer under the lemon custard. It still feels like a small magic trick.
Carb check
Here is where the carbs in a regular lemon custard pie come from, and what this version does about each one.
- Sugar: the regular version is sweetened with white sugar. This one uses 1/2 cup of granulated monk fruit sweetener.
- Crust: the regular version uses a flour-based baking mix. This one uses 1/2 cup of almond flour, which is where most of the remaining carbs live.
- Lemon and cream: the 1/3 cup of fresh lemon juice and 1 cup of heavy cream add a small amount of carbs, spread across 8 servings.
- Net carbs, protein and fat per serving: these are worked out from USDA data in the nutrition panel on the recipe card below, so there is one set of numbers to follow.
One label to read before you buy: granulated monk fruit sweeteners are often blended with other sweeteners, and the brands differ. If you track net carbs closely, check the bag you actually use.
The timing secret (and the swaps that make it work)
Take the pie out while the center still barely jiggles, then let it cool on the counter for a full hour and chill it for at least 3 hours. Custard keeps setting after it leaves the oven. Pull it when it looks fully firm and you get a rubbery, weeping slice. Cut it warm and you get lemon soup. The chill is what makes clean slices.
That is the most common mistake with custard pies, and people usually blame the recipe for it.
What we swap and why
- Almond flour for baking mix. It is heavier than the egg and cream mixture, so it drifts down during baking and forms the bottom crust. The 1/2 tsp of baking powder gives it a little lift so it stays soft.
- Monk fruit for sugar. Granulated monk fruit dissolves in the blender with the liquid, so you don’t get gritty pockets.
- Heavy cream plus water for milk. The 1 cup of heavy cream gives the custard body, and the 1/2 cup of water loosens it so it stays silky.
- Fresh lemon only. The zest of 2 lemons carries most of the lemon smell, and the 1/3 cup of fresh juice brings the tang. Bottled juice tastes flat next to it.
The 4 tablespoons of melted butter round everything out, and the vanilla and pinch of salt keep the lemon from tasting sharp.

How to make sugar free lemon impossible pie
This is the shortest method on the whole site. Zest the lemons before you juice them, because zesting a squeezed lemon half is miserable.
- Heat and prep. Heat the oven to 350°F and butter the pie dish well, up the sides too.
- Blend. Put the 4 eggs, 1 cup heavy cream, 1/2 cup water, 1/2 cup almond flour, 1/2 cup monk fruit sweetener, 4 tbsp melted butter, zest of 2 lemons, 1/3 cup lemon juice, 1 tsp vanilla, 1/2 tsp baking powder and a pinch of salt in a blender. Blend until smooth, about 30 seconds.
- Bake. Pour into the buttered dish and bake 45 to 50 minutes, until the center barely jiggles when you nudge the dish.
- Cool, then chill. Cool on the counter for 1 hour, then refrigerate for at least 3 hours before slicing.
The batter looks thin going into the oven. It is supposed to. The almond flour settles while it bakes and turns into the soft bottom crust.

Air fryer or oven
This one is oven only, at 350°F for 45 to 50 minutes. A full pie dish of thin custard batter is awkward to carry into an air fryer basket, and the recipe has no air fryer time, so we won’t guess one.
If your oven runs hot, check at the 45 minute mark. Look at the center. The edges set first and will look done well before the middle is ready.

What to serve it with
It’s tangy and creamy on its own, so keep the extras simple.
- A spoonful of unsweetened whipped heavy cream
- A few fresh raspberries or blueberries for color
- Extra lemon zest grated over the top just before serving
- Hot coffee or tea
It also works as dessert after a big low-carb dinner, because it doesn’t taste like a diet version of anything.
Storing, freezing and reheating
Fridge: cover the dish and keep it chilled. It keeps well for a few days, and the crust stays soft without going soggy.
Freezing: custard pies can turn grainy or watery after thawing, so we don’t freeze this one. It’s quick enough to bake fresh.
Reheating: don’t. This is a cold pie. Serve it straight from the fridge, or let a slice sit out for a few minutes if you like it slightly softer.
Questions you’ve asked
Why is my impossible pie watery in the middle?
It was either underbaked or cut too soon. Bake until the center barely jiggles (a slosh means it needs longer), then give it the full hour on the counter and at least 3 hours in the fridge.
Why didn’t a crust form?
The almond flour has to be blended into the batter. Sprinkling it on the bottom won’t work. Blend everything together for about 30 seconds so the flour is evenly suspended, then pour. It settles on its own in the oven.
Can I make it ahead?
Yes, and it’s the easier plan. It needs at least 3 hours of chilling anyway, so bake it the day before a gathering.
Can I use a different sweetener?
The recipe is written for granulated monk fruit sweetener. If you swap in another granulated keto sweetener, sweetness varies between brands, so taste a drop of the blended batter and adjust before it goes in the dish.
Does it taste eggy?
With the zest of 2 lemons, 1/3 cup of juice and the vanilla, the lemon leads. Chilling it well also mellows any eggy note, which is one more reason not to rush the fridge time.
