This is not your average meatloaf. A juicy, tender beef meatloaf layered with smoky bacon and THREE melty cheeses — cheddar, mozzarella, and provolone — then finished with a sweet, smoky caramelized glaze. Every slice reveals a rich, cheesy center wrapped in savory beef and crispy bacon. Pure comfort food, upgraded.
Ingredients
For the Meatloaf
- 2 lbs (900g) ground beef
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 cup breadcrumbs
- 2 eggs
- 1/2 cup milk
- 2 tablespoons Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Cheese & Bacon Layer
- 6 slices bacon
- 1/2 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup provolone cheese, shredded
For the Glaze
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
Instructions
- Preheat the oven to 375°F (190°C). Line a loaf pan or baking sheet with parchment paper.
- In a large bowl, combine the ground beef, onion, garlic, breadcrumbs, eggs, milk, Worcestershire sauce, smoked paprika, Italian seasoning, salt, and black pepper. Mix gently until just combined — do not overmix.
- Press about half of the meat mixture into a flat rectangular layer.
- Arrange the cheddar, mozzarella, and provolone in the center, then lay the bacon slices over the cheese.
- Cover completely with the remaining meat mixture and firmly seal the edges so the cheese stays inside.
- Mix the ketchup, brown sugar, Worcestershire sauce, and smoked paprika. Spread half of the glaze over the meatloaf.
- Bake for 50–60 minutes. Brush with the remaining glaze and bake for another 10–15 minutes, until fully cooked and beautifully caramelized.
- Let the meatloaf rest for 10–15 minutes before slicing, so the cheese stays in perfect layers.
Pro Tips
- Use a combination of cheeses for the best flavor and melt.
- Don’t overmix the beef mixture or the meatloaf can become dense.
- Resting before slicing is the secret to clean, cheesy layers in every slice.
