Pineapple cheesecake fluff is the potluck bowl for days when the whole family is coming, the cousins want something sweet, and you want ten minutes of work with no oven. Crushed pineapple, cheesecake pudding, whipped topping and mini marshmallows go into one bowl, and the fridge does the rest.

It is a full-sugar dessert, so it belongs on the sweet side of the table. It makes 8 servings, which is about right for a potluck where five other desserts are competing for space.
What goes into pineapple cheesecake fluff
- 1 box (3.4 oz) instant cheesecake pudding mix
- 1 can (20 oz) crushed pineapple with juice
- 4 oz cream cheese, softened
- 8 oz whipped topping, thawed
- 1 can (8 oz) pineapple tidbits, drained
- 2 cups mini marshmallows
- 1/3 cup graham cracker crumbs

Beat the cream cheese before anything else
Every smooth cream cheese filling starts the same way: soft cream cheese, beaten smooth, before the sugar or liquid goes in. Cold or half-beaten cream cheese never fully blends once you add liquid, and you end up chasing little white specks around the bowl with a whisk.
So let the 4 ounces of cream cheese soften on the counter and beat it until it looks like frosting. Only then stir in the crushed pineapple.
Keep the crushed pineapple juice, drain the tidbits
The juice from the crushed pineapple is the liquid that sets the pudding. When you whisk in the dry cheesecake pudding mix, that juice is what turns it thick. Drain it off and the pudding mix has nothing to work with.
The tidbits get drained. They are there for chunks of fruit, and their extra juice would only make the fluff runny.
How to make it
You need one big bowl, a hand mixer or a sturdy whisk, and a spatula for folding. Plan on about 10 minutes of work, then 1 hour in the fridge.
- Beat the cream cheese. Beat the 4 oz of softened cream cheese until completely smooth, then stir in the 20 oz can of crushed pineapple with its juice.
- Add the pudding mix. Whisk in the 3.4 oz box of dry instant cheesecake pudding mix until the mixture turns thick.
- Fold in the rest. Gently fold in the 8 oz of thawed whipped topping, the drained 8 oz can of pineapple tidbits and the 2 cups of mini marshmallows. A light hand keeps the air in the whipped topping.
- Chill and top. Chill for 1 hour. Sprinkle the 1/3 cup of graham cracker crumbs over the top just before serving.

If you like this no-bake bowl, the lemon blueberry fluff party tray is a citrus version that travels easily to potlucks.

Swaps and where to serve it
- No cheesecake pudding? Vanilla instant pudding works. Add an extra 2 ounces of cream cheese to bring back the cheesecake taste.
- Marshmallows: the mini ones are the right size here. They soften a little in the fridge and give the fluff its chewy bits.
- Graham crumbs: they go on at the end, right before serving, so they stay crunchy.
Fluff salads live in that funny spot between side dish and dessert. In a lot of families the bowl sits right next to the grilled meat and the green salad, and nobody questions it. Since nothing gets cooked, it is handy in summer when you want the oven off, and at holidays when the oven is already full.
At cookouts it sits well beside grilled chicken, burgers or ribs, where the cool pineapple is a nice break from smoky, salty food. On a holiday table, put it next to a baked ham, where pineapple is already a familiar partner. If some guests skip sugar, set out a plain green salad and some roasted vegetables so they have plenty to fill their plates.
Keeping it cold and making it ahead
Fridge: keep the fluff covered. It is best the day you make it and still good the next day, though the marshmallows soften more the longer they sit. If you are making it ahead, leave the graham crumbs off until serving.
Freezer: skip it. Whipped topping, pudding and fruit all change texture after thawing, and you end up with a watery bowl.
Serving: no reheating needed. Serve it cold, and don’t leave it out on a warm potluck table for long. Put the bowl back in the fridge between rounds.
If your crowd likes fruit fluff, the banana split fluff is an easy next bowl, and the Hawaiian cheesecake salad leans on the same pudding idea. For the holidays, our Christmas cherry pineapple salad turns pink with cherry pie filling, and the lime pear gelatin salad brings an old-fashioned green bowl to the table.
Pineapple fluff questions
Why is my fluff runny?
Usually the pineapple tidbits weren’t drained, or the whipped topping was stirred hard instead of folded. Give it the full hour in the fridge too, since it firms up as it chills.
Can I make it the night before?
You can, as long as you keep it covered in the fridge and add the graham cracker crumbs right before serving. Expect the marshmallows to be softer than they are after one hour.
Is it low-carb?
No. The pudding mix, pineapple and juice, marshmallows, whipped topping and graham crumbs all carry sugar. Brands vary, so check the labels on the boxes and cans you buy if you track numbers.
Can I double it?
Yes. Double every amount and use a very large bowl so you have room to fold without knocking the air out of the whipped topping.
