This orange creamsicle salad is the full-sugar potluck classic, made with regular orange gelatin, instant vanilla pudding, mini marshmallows and canned mandarins. It tastes like the orange and vanilla ice cream bar from the truck, in a bowl you can spoon from.
Save this recipe for later:
The odd part is that the gelatin goes in dry. It flavors and thickens the cream and never sets into a wobbly block.
It is a no-bake side for cookouts, church suppers and holiday tables. You need one large bowl, a whisk, a spatula and a serving bowl. No oven, no stovetop.
What goes into orange creamsicle salad
- 1 box (3 oz) orange gelatin
- 1 box (3.4 oz) instant vanilla pudding mix
- 1 cup cold milk
- 1 tub (8 oz) whipped topping, thawed
- 2 cans (11 oz) mandarin oranges, well drained
- 2 cups mini marshmallows
- 1 tsp orange zest
Use the gelatin straight from the box. It goes in as a powder with the pudding mix and the milk.
How to keep it from going watery
Fluff salads have one well-known failure: the watery bowl. You make it in the morning, and by the time it reaches the potluck table there is a puddle of orange juice at the bottom and the cream has slumped. Two steps in the recipe prevent that.
Dry gelatin thickens the cream
Whisked straight into the pudding mix and cold milk, the dry orange gelatin never gets the hot water it would need to set firm. It dissolves into the milk, adds that bright orange flavor and helps the pudding thicken in about 2 minutes of whisking. Gelatin is the same thing that keeps a stabilized whipped filling standing on a cake for hours.
Drain the mandarins well
The recipe says well drained, and it means it. Tip both cans into a sieve and let them sit while you whisk, shaking the sieve once or twice. Any syrup that rides into the bowl thins the cream and becomes that puddle later.
Mixing the creamsicle salad
- Make the base. Put the dry orange gelatin, the instant vanilla pudding mix and 1 cup cold milk in a large bowl. Whisk for 2 minutes until thick. It will look like a soft, pale orange pudding.
- Fold in the topping. Add the thawed whipped topping and the orange zest. Fold with a spatula, scraping from the bottom and turning the bowl, so the whipped topping keeps its air.

- Add the fruit and marshmallows. Set aside a few mandarin segments for the top. Fold the rest of the mandarins in along with the 2 cups mini marshmallows. Be gentle, since mandarin segments tear easily.

- Spoon and top. Spoon the salad into your serving bowl and scatter the saved mandarins over the top.
- Chill. Refrigerate for at least 1 hour so the cream firms up and the marshmallows soften slightly.

Do not skip the chill. Straight out of the mixing bowl, the salad is too loose to scoop neatly.
For a creamsicle dessert with a cake-like twist, try our mandarin orange fluff with vanilla wafers , where the cookies soften right in the bowl.
Small changes that work
Zest only the orange part. One teaspoon of orange zest sounds small, yet it is where the fresh orange taste comes from. Zest only the colored skin, because the white pith underneath is bitter.
Can you cut the sugar? Every part of this bowl carries sugar: the gelatin, the pudding mix, the marshmallows and the mandarins, which are packed in syrup or juice. Sugar-free gelatin and sugar-free instant pudding exist and cut a share of it, though the marshmallows and fruit still count. We have not built a reduced-sugar version of this card, so check your own labels if you try that swap.
Save the topping fruit for last. If you are carrying the bowl somewhere, pack the saved mandarins in a small container and scatter them on when you arrive. They look brighter that way.
Serving it at a cookout and keeping leftovers
In the Midwest this sits on the table next to the main dishes, and nobody argues about whether it is a salad or a dessert. Since it is sweet, it pairs well with grilled or smoked chicken, pulled pork, a crisp green salad with a vinegar dressing, roasted green beans and deviled eggs. Small scoops go further than big ones.
Whipped topping softens fast in the sun. At an outdoor potluck, keep the bowl in a cooler until serving time, or set it in a larger bowl of ice.
Make-ahead: make it the morning of your event, or the night before if your mandarins are drained really well.
Storing: cover the bowl tightly and keep it in the fridge. It is at its best within a day or two. After that the mandarins start to weep and the marshmallows go very soft. Serve it cold, straight from the fridge. There is nothing to reheat here.
Freezing: we keep this one in the fridge. Freezing changes the texture of the marshmallows and the mandarins, and the cream does not come back the same after thawing.
If your potluck table needs more than one fluff, the Hawaiian cheesecake salad and the tangy lemon blueberry fluff salad sit nicely next to this one, our cranberry orange gelatin salad covers Thanksgiving, and kids tend to head straight for the banana split fluff .
Creamsicle salad questions
Why not dissolve the gelatin in hot water first?
Dissolved gelatin would set into a firm mold. Used dry, the powder flavors and thickens the cream and keeps it soft and spoonable.
Why is my salad runny?
Usually the mandarins were not drained well, or the base was not whisked the full 2 minutes before the whipped topping went in. A short chill also leaves it loose, so give it the full hour.
Can I use a different flavor of gelatin?
The orange gelatin is what makes it a creamsicle, and the mandarins and zest are built around it. Another flavor would give you a different salad.
Can I use fresh oranges instead of canned mandarins?
The recipe is written for canned mandarins, which are soft, seedless and already free of membrane. Fresh segments are firmer and juicier and would change the texture, so drained canned mandarins are the way to go here.

Orange Creamsicle Salad
Ingredients
Instructions
Whisk the dry gelatin, pudding mix and milk for 2 minutes until thick.
Fold in the whipped topping and orange zest.
Set aside a few mandarins and fold the rest in with the marshmallows.
Spoon into the bowl and top with the saved mandarins.
Chill at least 1 hour.
Notes
Use the gelatin powder dry; it flavors and thickens the cream without setting it like gelatin.
Drain the mandarins in a sieve while you whisk so extra syrup does not make the salad watery.
Fold gently so the whipped topping keeps its air and the mandarin segments stay whole.
