Everything goes into one pitcher, so there is no cooking at all. The berries color the drink, the lemon juice adds tang, and the sparkling water goes in with the tea so the drink stays light and fizzy.

What Goes into the Pitcher

The recipe card at the bottom has the amounts. The ingredients, in order of how much they shape the drink:

  • Unsweetened iced tea (2 cups): the base. It adds no carbs.
  • Sparkling water (1 cup): adds the fizz and keeps the punch light.
  • Strawberries, raspberries, blueberries and blackberries (1/2 cup each): use fresh, ripe berries. Slice the strawberries. The raspberries are tart and balance the sweetness.
  • Lemon juice (1/4 cup): squeezed fresh, for a clean tang.
  • Erythritol (1/4 cup): or another keto-friendly sweetener.
  • Ice cubes: for serving over, so the punch stays cold.

Mixing and Chilling

Wash and slice the fruit first, so the rest goes quickly. Pour the tea and sparkling water into a large pitcher and stir gently. Add the four berries, then stir in the lemon juice and erythritol until the sweetener has fully dissolved.

Taste it and add more sweetener if you want. It is easier to add than to take out, so begin with the amount in the card.

Chill the punch in the refrigerator for at least 30 minutes so the flavors blend. A few hours is better, and overnight works too. Serve it over ice in glasses, with a few extra berries on top if you like.

Equipment

A large pitcher is the main thing, and a big bowl does the job if you have no pitcher. You also need measuring cups, a knife and cutting board for the berries, and a long spoon for stirring.

Ways to Change the Punch

Low Carb Summer Fruit Punch – Delicious Variations to Customize Your Keto Dish
  • Mint: a few sprigs of fresh mint in the pitcher before chilling. Basil works the same way.
  • Cucumber or lemon slices: use them in place of some or all of the berries. Cucumber adds crunch and lemon adds a sharper edge.
  • A tropical version: a splash of coconut water, in moderation, adds a little sweetness and a hint of coconut.
  • Other fruit: frozen berries work if fresh ones are not available. They may release more liquid as they thaw, which thins the punch slightly.

What to Serve Alongside

  • Cheese platter with low-carb crackers: the creamy cheese goes well with the fruit.
  • Veggie sticks: celery, cucumber and bell pepper with guacamole or ranch dip.
  • Sparkling water with lime or lemon: a plain option next to the punch for guests who want less sweetness.

FAQ

Can I use frozen fruit instead of fresh?

Yes. Frozen berries release more liquid as they thaw, so the punch may come out a little thinner, but the flavor is still good.

How long does the punch keep?

Up to 3 days in the refrigerator, in an airtight container. The flavors keep blending as it sits.

Can I use another sweetener?

Stevia, monk fruit and allulose all work in place of erythritol. Each tastes a little different, so try one and adjust the amount.

Can I make it ahead?

Yes. A few hours ahead is enough, and the night before is fine. The flavors blend better the longer it chills.

Is it suitable for kids?

It is low in carbs and has no sugar, and kids can drink it too. Adjust the sweetness to their taste.
