Lemon Blueberry Fluff Party Tray

This lemon blueberry fluff is a cold, creamy, no-bake dessert that lives in a 9 by 13 inch dish instead of a bowl. The whole top is covered in fresh blueberries, so it travels well, scoops cleanly and feeds 12 at a potluck or holiday table. It takes about 15 minutes to mix, then the fridge does the rest.

How to keep the cream pale and the berries from bleeding

The most common complaint with any blueberry fluff is a cream that turns streaky and gray-purple by the time it reaches the table. Wet berries cause it. Water clinging to the skins carries color out of any split berry and into the pudding as you fold. Rinse the blueberries early, spread them on a towel and let them dry fully before they go anywhere near the bowl. Pat the last of the moisture off if you are short on time.

Folding gently matters too. Two cups of berries go into the cream, and a heavy spatula will crush some of them. Use a wide spatula, sweep under the mixture and turn it over rather than stirring in circles. A few purple flecks are fine. A lilac tray means the berries were wet or got mashed.

Why the cream cheese goes in first

A lumpy fluff almost always starts with cold cream cheese. If it is still firm from the fridge, small white bits stay hard and never blend into the pudding. Let it soften on the counter, then beat it alone until it is completely smooth before anything else is added. Once the pudding mix and milk join it, those lumps are very hard to fix.

The milk should be cold. Instant pudding thickens with cold milk, and that thickening is what gives the tray enough body to hold a full layer of berries on top. Beat the pudding mix and milk into the cream cheese until the mixture looks thick and even, with no dry powder at the bottom of the bowl.

Making the fluff

  • Beat the cream cheese until smooth, then beat in the pudding mix and milk.
  • Fold in the whipped topping and half the lemon zest.
  • Fold in the marshmallows and 2 cups of the blueberries.
  • Spread evenly in a 9 by 13 inch dish and cover the top with the rest of the blueberries and zest.
  • Chill at least 2 hours.

A few notes on what to look for along the way. When you fold in the whipped topping, stop as soon as no white streaks remain; overworking it knocks out the air that makes this a fluff. Splitting the zest between the cream and the top gives you lemon flavor all the way through and a bright smell the moment the dish is uncovered. For the final layer, scatter the last cup of berries edge to edge so every scoop gets some.

Serving it from the tray

The 2 hour chill is what turns a soft mixture into something you can cut and lift with a spoon, so don’t rush it. Serve it cold, straight from the fridge, in the same dish it set in. A large serving spoon works better than a spatula because it brings up cream, marshmallows and the berry topping in one scoop.

Because the fluff is spread flat, the 9 by 13 inch dish carries easily in a car and fits on a crowded buffet table. If the drive is long, put the tray on the floor of the car and keep it level so the berries stay in place. Keep any leftovers chilled.

If you prefer the bowl version, our lemon blueberry fluff salad uses the same flavors. For more cold, scoopable party desserts, try the banana split fluff , the pineapple cheesecake fluff salad or our strawberry banana cheesecake salad .

Lemon blueberry fluff questions

Why is my fluff runny?

Usually the pudding never got a chance to thicken. Make sure the milk is cold and that you beat the pudding mix and milk into the cream cheese until thick before folding in anything else. Skipping or shortening the 2 hour chill also leaves it loose.

Can I use cook-and-serve pudding instead of instant?

Stick with instant. The recipe has no cooking step, and it relies on instant lemon pudding setting with cold milk alone.

Do the marshmallows stay chewy?

Mini marshmallows soften as the tray chills and pick up moisture from the cream, so they end up tender and pillowy. That softness is part of the classic fluff texture.

Why does the recipe hold back some blueberries and zest?

The reserved cup of berries and the second half of the zest form the topping. Folding everything in would leave a plain-looking surface, while the covered top makes the tray look finished and gives each scoop a fresh burst of fruit.
