This casserole is shredded chicken, crumbled bacon, cream cheese, cheddar, ranch dressing and broccoli, stirred together, spread in a 9×13 inch dish and baked under another layer of cheddar until bubbly. It is a low-carb, one-bowl dinner with almost no hands-on work. The recipe makes six servings, and the baking time is 25 to 30 minutes. Rotisserie or leftover chicken keeps the weeknight prep short, and the ranch dressing and cream cheese give the filling a rich, creamy texture.

Ingredients

  • Cooked, shredded chicken: 3 cups. Leftover chicken or rotisserie chicken saves time, and rotisserie adds extra flavor.
  • Cooked, crumbled bacon: 1 cup.
  • Cream cheese: 1 cup, softened.
  • Shredded cheddar cheese: 1 cup in the mixture, plus 1 more cup for the top.
  • Ranch dressing: 1 cup.
  • Broccoli florets: 1 cup, fresh or frozen.
  • Garlic powder and onion powder: 1 teaspoon each.
  • Salt and pepper: to taste.

Method

  • Preheat the oven to 350°F and grease a 9×13 inch casserole dish.
  • In a large bowl, combine the chicken, bacon, cream cheese, 1 cup of the cheddar, ranch dressing, broccoli, garlic powder and onion powder. Season with salt and pepper and mix until everything is evenly coated.
  • Pour the mixture into the dish and spread it evenly. Sprinkle the remaining 1 cup of cheddar over the top.
  • Bake for 25 to 30 minutes, until the cheese is bubbly and golden brown.
  • Let it cool for about 5 minutes before serving.

Tips and Swaps

Softened cream cheese mixes in much more easily than cold, so take it out ahead of time. Broccoli can go in fresh or frozen. For a spicier version, stir in jalapenos or a splash of hot sauce. The broccoli can be replaced with another low-carb vegetable such as cauliflower or bell peppers.

For crunch, top the casserole with crushed pork rinds or sliced almonds. For a Mediterranean version, add olives and sun-dried tomatoes. Turkey can replace the chicken.

Each serving has about 380 calories, 4 grams of net carbs, 30 grams of protein and 28 grams of fat.

Leftovers keep in an airtight container in the refrigerator for up to 3 days. To keep it longer, freeze individual portions and reheat them at 350°F until warmed through.

FAQ

Can I use turkey instead of chicken?

Yes. Turkey works and keeps the dish keto-friendly.

Is ranch dressing keto-friendly?

Many store-bought ranch dressings are low in carbs, but check the label for added sugar. A homemade ranch gives more control over what goes in.

Can I make it dairy-free?

Swap the dairy ingredients for lactose-free or plant-based versions. The texture will change somewhat.
