Hot Swiss onion dip is a baked party dip made from finely chopped sweet onion, Swiss cheese, mayonnaise and cream cheese, finished with a layer of Parmesan that turns golden in the oven. It feeds 10, takes about 40 minutes from start to table, and asks for nothing more than a bowl, a spoon and one baking dish. Set it out for a holiday spread, a game day or any gathering where people stand around the snack table.

What goes into hot Swiss onion dip

  • 2 cups finely chopped sweet onion
  • 2 cups (8 oz) shredded Swiss cheese
  • 1 cup mayonnaise
  • 4 oz cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh chives
  • Crackers or toasted baguette slices, for serving

That is a short list, and each item has a job. The sweet onion brings the flavor and a little crunch. Swiss cheese melts into long, stretchy strands. Mayonnaise and cream cheese hold everything together and keep the dip scoopable, while the Parmesan on top is what browns and gives you that golden crust. Chives go on at the very end for color and a fresh, mild onion bite.

Chop the onion smaller than you think

This is the one step that decides the texture. The recipe calls for the onion chopped very fine, and there is a good reason: the dip bakes for only 25 to 30 minutes, which is enough time to soften small pieces all the way through. Big chunks stay firm and sharp, and a scoop that hits one feels like biting into raw onion inside a warm cheese sauce.

Aim for pieces about the size of a grain of rice. A sharp knife works, and so does a few quick pulses in a food processor if you stop before it turns to mush. When the pieces are tiny, they melt into the cheese and every cracker comes up creamy.

Let the cream cheese come to room temperature

The ingredient list says softened cream cheese, so take the 4 oz out of the fridge before you start chopping. Cold cream cheese breaks into small lumps when you stir it with the mayonnaise, and those lumps never fully disappear in the oven. Soft cream cheese blends right in, and the base turns smooth in a few turns of the spoon.

How to make it

  • Heat the oven to 375°F and grease a 1 1/2 quart baking dish.
  • In a bowl, stir together the chopped onion, Swiss cheese, mayonnaise, cream cheese and black pepper until everything is evenly combined.
  • Spread the mixture in the prepared dish and sprinkle the Parmesan over the top.
  • Bake for 25 to 30 minutes, until the dip is bubbling and the top is golden brown.
  • Let it rest for 5 minutes, sprinkle with the chives and serve with crackers or toasted baguette slices.

Reading the oven: when the dip is done

Look at two things at the 25 minute mark. The edges should be bubbling steadily, and the Parmesan layer should have turned golden brown. If the top is still pale, give it the remaining time up to 30 minutes and check again. The bubbling tells you the center is hot; the color tells you the crust has formed.

Spread the mixture in an even layer before it goes in. A mound in the middle heats more slowly than the edges, so you end up with browned sides and a lukewarm center. The 1 1/2 quart dish keeps the layer at a depth that cooks through in that window.

The 5 minute rest matters more than it seems. Straight out of the oven, the cheese is at its loosest and the oil can pool on top. A short rest lets the dip settle and thicken a little, so it clings to a cracker instead of sliding off. It also saves a few burned mouths.

Setting it out for a crowd

Serve the dip warm, right in the baking dish, with a generous pile of crackers or toasted baguette slices around it. Sturdy crackers hold up best because the dip is thick and heavy with cheese; thin, delicate ones tend to snap. Toasted baguette slices give you a bit more crunch and a slightly larger scoop.

The recipe makes 10 servings, which fits a holiday table, an open house or a game day spread with a few other snacks. Put the dish on a trivet or a folded towel, since it comes out of a 375°F oven and the dish stays hot for a while. Save the chives for right before serving so they stay bright green.

Questions about this dip

What size dish should I use?

A 1 1/2 quart baking dish, greased before you add the mixture. That size gives an even layer that bakes through and browns in 25 to 30 minutes.

How many people does one batch feed?

The recipe makes 10 servings, enough for a party table where the dip sits alongside other appetizers.

Why does my dip look oily right out of the oven?

The cheese and mayonnaise release some fat while they bake. Let the dip rest the full 5 minutes before serving; it settles and thickens as it cools slightly, and a quick stir at the edge folds most of it back in.

Do I add the chives before baking?

No. The recipe has you sprinkle the chives on after the 5 minute rest, so they stay fresh and green on top of the golden crust.
