Halloween Vampire Bite Cupcakes

These are chocolate cupcakes under a blood-red buttercream, finished with a drizzle of chocolate syrup along the edge of the frosting and mini marshmallows set on top as vampire teeth. The batter is thin, because boiling water is stirred in at the end, and that is what gives a deep cocoa flavor and a soft crumb. The recipe makes 12 cupcakes in 40 minutes, with 20 minutes of prep and 20 of baking.

Nothing in the list is unusual, and the decoration takes only a few minutes once the cupcakes are cool.

The Chocolate Batter

The card lists every amount. This is what each part of the batter does.

  • All-purpose flour (1½ cups), sugar (1 cup) and unsweetened cocoa powder (1/3 cup): the dry base. Swap half of the flour for cocoa powder if you want a richer chocolate flavor.
  • Baking soda (1 teaspoon), baking powder (½ teaspoon) and salt (½ teaspoon): the soda and powder lift the cupcakes, and the salt balances the sweetness.
  • Egg (1 large), buttermilk (1 cup), vegetable oil (1/3 cup) and vanilla (1 teaspoon): the wet mixture. The buttermilk adds moisture and a slight tang, and the oil keeps the crumb moist.
  • Boiling water (1 cup): it blooms the cocoa powder and deepens the chocolate flavor.

Whisk the dry ingredients in one bowl and the wet ingredients in another. Add the wet mixture to the dry gradually and stop as soon as it is combined, because overmixing makes dense cupcakes. Then stir in the boiling water. The batter will look thin, and that is normal.

Baking

Heat the oven to 350°F (175°C) and line a muffin tin with liners. Fill each liner about 2/3 full so the cupcakes have room to rise. Bake for 18 to 20 minutes, until a toothpick in the center comes out clean.

Let them cool in the pan for 5 minutes, then move them to a wire rack. Frost them only when they are completely cool.

Frosting and the Bite Effect

  • Unsalted butter (1 cup, softened): beat it until creamy.
  • Powdered sugar (4 cups) and heavy cream (1/4 cup): add the sugar gradually, alternating with the cream, and mix until smooth.
  • Vanilla (1 teaspoon) and red gel food coloring: add the coloring until the frosting is blood red. Gel coloring gives the strongest color.

If the frosting is too thick, add a splash more cream. If it is too thin, add a little more powdered sugar. You want it to hold its shape and still spread easily.

Frost the cooled cupcakes generously, drizzle chocolate syrup around the edges of the frosting so it looks like a bite mark, and press a few mini marshmallows on top for teeth.

Variations

Flavor

  • Spiced chocolate: add a pinch of cinnamon and a dash of nutmeg to the dry ingredients.
  • Mint chocolate: add 1 teaspoon of peppermint extract to the wet ingredients and top with crushed peppermint candies.
  • Orange: add the zest of one orange to the batter.

Dietary

  • Vegan: replace the egg with a flaxseed egg (1 tablespoon of ground flaxseed mixed with 2.5 tablespoons of water) and use plant-based milk in place of the buttermilk. In the frosting, use vegan butter and a dairy-free cream alternative.
  • Gluten-free: use a 1:1 gluten-free flour blend in place of the all-purpose flour.

Decoration

  • Spider webs: pipe white icing in a web pattern over the frosting and add a plastic spider.
  • Gummy worms: let them dangle over the edge of the frosting.
  • Graveyard soil: sprinkle chocolate shavings or crushed cookies over the top.

Equipment and Serving

You need a muffin tin (a silicone cupcake mold works too), a few mixing bowls, measuring cups and spoons, and an electric mixer for the frosting. A whisk will do the job if you have no mixer, though it takes longer.

For a party, arrange the cupcakes on a dark platter or cake stand with fake spider webs or plastic bats. A cheese platter with olives and nuts balances the sweetness, and a mocktail of sparkling water, lime juice and a splash of cranberry juice goes well with them.

FAQ

Can I make these gluten-free?

Yes. Use a 1:1 gluten-free flour blend in place of the all-purpose flour.

How should leftovers be stored?

Keep them in an airtight container at room temperature for up to three days. They can also go in the refrigerator for longer storage, but bring them to room temperature before serving.

Can I use a different frosting color?

Yes. Green or purple both work. Use gel food coloring for a strong color.

Can I make them ahead of time?

Yes. Bake them a day ahead and store them in an airtight container, then frost them just before serving so the frosting stays fresh.

How can the chocolate flavor be made richer?

Replace half of the all-purpose flour with cocoa powder.
