Cheesy Hash Brown Beef Skillet

Crispy golden hash browns, savory seasoned beef, and a cheese pull that goes on forever — all in one pan. The ultimate weeknight comfort dinner, ready in about 30 minutes.

Ingredients

  • 4 cups shredded hash browns, thawed and patted very dry
  • 1 lb ground beef
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 2 tbsp oil
  • Salt and black pepper, to taste
  • 1 1/2 cups cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 2 green onions, sliced (optional, for garnish)
  • Sour cream, for serving (optional)

Instructions

  • Heat 1 tbsp oil in a large cast-iron skillet over medium-high heat. Spread the hash browns in an even layer, press down lightly, and cook undisturbed for 8–10 minutes until the bottom is deep golden and crispy. Flip in sections and crisp the other side for 3–4 minutes.
  • Push the hash browns to the edges (or remove briefly). Add the remaining oil and brown the ground beef, breaking it up, for 5–6 minutes. Season with garlic powder, onion powder, paprika, salt, and pepper. Drain any excess fat.
  • Spread the beef evenly over the crispy hash browns in the skillet.
  • Top generously with cheddar and mozzarella. Cover with a lid for 2–3 minutes, or place under the broiler for 2–3 minutes, until the cheese is fully melted and stretchy.
  • Rest for 2 minutes, garnish with green onions, and serve straight from the skillet with a dollop of sour cream if you like. Enjoy!
