Christmas jam baked brie is a whole wheel of brie warmed until the center turns soft, then topped with spiced jam, toasted pecans, honey and a sprig of rosemary. It takes 20 minutes and feeds 6 to 8 people, so it suits a holiday party, a quiet Christmas Eve, or any evening when guests arrive before dinner is ready.

Ingredients for baked brie: a wheel of brie, red jam, toasted pecans, honey, a rosemary sprig, crackers and baguette slices

The jam does most of the flavor work here. A spiced Christmas jam brings warm notes that sit well against the mild cheese, and a cranberry strawberry jam gives you a brighter, tarter top. If you like to make your own, our spiced Christmas jam fits this recipe well.

Two small steps that change the texture

Leave the rind on. It is edible, and it works like a thin wall that holds the melted cheese in shape while it bakes. Scoring the top lightly in a crisscross pattern lets the jam settle into the cheese, so keep those cuts shallow and stay away from the sides.

Watch the feel of the cheese more than the clock. At 12 minutes, press the top gently. If it gives under your finger, it is ready. If it still feels firm, give it the full 15 minutes.

Instructions

  • Heat the oven to 350°F and line a small baking sheet with parchment.
  • Lightly score the top rind of the brie in a crisscross pattern.
  • Bake the brie 12 to 15 minutes, until it feels soft when pressed.
  • Meanwhile warm the jam in a small pan until spoonable.
  • Move the brie to a board, spoon the jam over, scatter the pecans, drizzle with honey and top with rosemary. Serve right away.

How to cut it without a puddle on the board

Hot brie runs. Let the wheel rest for 2 minutes before you cut into it, and the center stays gooey without flooding the board. Cut wedges the way you would cut a small cake, from the middle out to the edge, and lift each one with a small server. The parchment makes the move from the baking sheet to the board much easier, so slide the wheel across with the paper under it.

Warm the jam only until it spoons easily. It should sit on top of the cheese in a thick layer. If it turns thin and runny in the pan, take it off the heat and give it a minute to thicken before you spoon it on.

What to serve with it

Crackers and baguette slices both work. Crackers give you a firm edge for scooping, and baguette slices soak up the honey and jam. Set them around the wheel on the same board so nobody has to reach far, and put out a small knife or two for spreading.

Serve the brie as soon as it is topped. It tastes best warm, while the center is still soft. As it cools, the cheese firms up again and the jam sets on top, which is still good but a different thing. For a party, bake it just before people sit down and keep the jam warm on the stove until the cheese comes out.

Getting ahead on a busy day

Most of this recipe can wait until the last minute, which helps when the oven is busy with a big holiday dinner. Toast and chop the pecans earlier in the day, measure the jam into the pan and arrange the board with crackers. When guests are close, the brie goes in and you only need about 15 minutes.

Leftovers are unlikely with a group, but if you have some, wrap them and keep them in the fridge. The cheese will be firm when cold, so bring it back to room temperature or warm it briefly in the oven before serving.

FAQ

Do you eat the rind on baked brie?

Yes. The white rind is edible and soft after baking, and it helps each wedge keep its shape on a cracker.

Which jam works if I have no Christmas jam?

Cranberry strawberry jam is the listed swap in this recipe. Use a thick jam so it stays on top of the cheese.

Why did my brie not melt in the middle?

It probably needed the full 15 minutes. Press the top before you take it out. A ready wheel feels soft under light pressure.

Can I skip the pecans?

Yes, the jam and honey carry the topping without them. You will lose the crunch, so serve it with a crisp cracker.
