These mini bagel bites get their chew from melted mozzarella and cream cheese instead of wheat dough. Almond flour, an egg and baking powder bind it, and a homemade everything seasoning of sesame seeds, poppy seeds, dried minced onion and coarse sea salt goes on top. The recipe makes 12 bites in about 25 minutes, and the dough is mixed in two bowls with a quick stop in the microwave.

What Goes into the Dough

The exact amounts are in the recipe card at the bottom. This is what each ingredient does.

  • Almond flour: the base of the dough. It adds a nutty flavor and gives the bites their body.
  • Shredded mozzarella: once melted, it gives the chew that makes these taste like bagels.
  • Cream cheese: adds richness and moisture so the bites stay soft inside. Use it softened.
  • Egg: the binder that holds the dough together.
  • Baking powder: helps the bites rise a little.
  • Garlic powder and onion powder: mixed into the dough so the savory flavor runs through the whole bite and is not limited to the crust.
  • Everything seasoning: sesame seeds, poppy seeds, dried minced onion and coarse sea salt, pressed on before baking.

Making the Dough

Heat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Melt the mozzarella and cream cheese together in a microwave-safe bowl: 30 seconds, stir, then another 30 seconds, until the two are smooth and combined.

In a second bowl, mix the almond flour, baking powder, garlic powder and onion powder. Add the melted cheese and the egg and stir until a dough forms. It should feel slightly sticky but still workable. If it is too wet to handle, a bit more almond flour fixes it.

Divide the dough into 12 equal portions and roll each into a ball. Space them on the baking sheet, mix the seasoning, and sprinkle it generously over each one. Bake for 12 to 15 minutes, until golden brown, and let them cool slightly before serving.

Tips for Better Bites

  • Start with room-temperature cream cheese and egg. They blend into the other ingredients more easily, which gives a smoother dough and a better texture.
  • Watch the oven. Overbaked bites turn dry, so pull them when they are golden brown. They keep cooking a little after they come out.
  • Change the seasoning. Rosemary or thyme works in place of the everything mix, and a sprinkle of cinnamon turns them sweet.

Ways to Change Them

  • Herbs: mix fresh or dried rosemary or thyme into the dough.
  • Other cheeses: sharp cheddar or pepper jack can go into the dough. For a cheesier bite, the card suggests 1/4 cup of grated Parmesan.
  • Heat: add 1/4 teaspoon of red pepper flakes to the dough before baking.
  • Sweet version: leave out the savory seasoning and use cinnamon with a sugar substitute such as erythritol or stevia.

What to Serve With Them

Creamy avocado dip is an easy partner: mash ripe avocados with lime juice, garlic powder and a pinch of salt. Cucumber slices topped with cream cheese, and a pinch of everything seasoning, make a crunchy side. For a drink, sparkling water with lemon or lime goes well with the savory bites, or blend a quick smoothie from unsweetened almond milk, spinach and protein powder.

Equipment

You need two mixing bowls, one of them microwave-safe, a baking sheet, parchment paper and measuring cups and spoons. A silicone baking mat can stand in for the parchment.

FAQ

Can I freeze the bagel bites?

Yes. Let them cool completely, then store them in an airtight container or freezer bag for up to 2 months. Reheat in the oven or microwave until warmed through.

How should leftovers be stored?

Keep them in an airtight container in the refrigerator for about 3 to 4 days. Reheat in the oven or microwave before serving for the best texture.

Can I use other flours?

Coconut flour is another low-carb option, but it absorbs more liquid, so the dough may need adjusting.

Is there a substitute for cream cheese?

Mascarpone or Greek yogurt will give a similar creamy texture, though the flavor will shift slightly.
