Witches Brew Lemonade is plain fresh lemonade turned black with a teaspoon of food-grade activated charcoal, made for Halloween tables. It takes 10 minutes to put together, needs no cooking, and makes 8 servings of 1 cup each. The only real wait is the 1 hour in the refrigerator.

Everything happens in one pitcher. You stir the lemon juice and sugar together, add the water and the charcoal, chill it, and pour it over ice with lemon slices and mint.

What Goes in the Pitcher

  • Fresh lemon juice (2 cups): this takes about 10 to 12 lemons. Bottled juice will not give the same sharp taste, so squeeze them yourself.
  • Granulated sugar (1 cup): it balances the tartness. Erythritol or stevia can replace it if you prefer; adjust the amount to taste, since sweeteners vary in strength.
  • Water (6 cups): sparkling water works too if you want it fizzy.
  • Activated charcoal (1 teaspoon, food grade): this gives the drink its dark color.
  • Green food coloring (1/2 teaspoon, optional): a little tints the black toward a murky green. It is only needed if you want a spookier shade.
  • Ice, lemon slices and fresh mint: for serving.

Mixing It

Dissolve the sugar in the lemon juice before anything else goes in. Stir until you cannot see or feel any grains, because undissolved sugar leaves the drink gritty. Then add the water and stir in the charcoal until the color is even. If you are using green food coloring, add it at this stage and keep mixing until you like the shade.

Chill it for at least 1 hour. You can also make it a day ahead, which takes the work out of party day.

Small Adjustments That Help

  • Sweetness: if you like a less sweet glass, start with half the sugar and add more to taste.
  • Cold: serve over ice. Outdoors, stand the pitcher in a bowl of ice.
  • Pulp: a fine mesh strainer removes pulp and seeds from the juice before you mix.
  • Ice: gummy worms or eyeball-shaped ice cubes fit the theme.

Ways to Change the Brew

  • Fizzy: replace half of the water with club soda or lemon-lime soda.
  • Berry: a splash of cranberry juice gives a red tint and a little extra sweetness.
  • Herbal: muddle a few mint or basil leaves in the pitcher before adding the other ingredients. Rosemary also works.
  • Spicy: a dash of cayenne pepper or ginger.
  • Frozen: blend the lemonade with ice for a slushy.
  • Rainbow: layer different food colorings in the glass.

What to Serve Alongside

The tart lemon suits salty and savory snacks. A cheese and charcuterie board with cured meats and olives is the simplest match. Stuffed mini bell peppers with cream cheese and herbs, cauliflower buffalo bites, avocado deviled eggs and spinach and artichoke dip with celery and cucumber all work as party food. For other drinks on the table, unsweetened iced tea with lemon or a mocktail of sparkling water, herbs and a splash of lime or lemon juice sit well beside it.
