Hot Bacon Swiss Onion Dip

This hot bacon Swiss onion dip is the one that tends to disappear first at a party. Sweet onion, Swiss cheese and crisp bacon bake together under a Parmesan crust until the top turns golden and the inside stays soft and scoopable. It feeds 10, takes 45 minutes from start to table, and suits anyone hosting a holiday spread or a game night who wants one warm dish that needs no fuss.

What goes into the dip

  • 2 cups finely chopped sweet onion
  • 2 cups (8 oz) shredded Swiss cheese
  • 1 cup mayonnaise
  • 4 oz cream cheese, softened
  • 6 slices bacon, cooked crisp and crumbled
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh chives
  • Crackers or toasted baguette slices, for serving
Chopped sweet onion, shredded Swiss, mayonnaise, cream cheese, six bacon strips, Parmesan, pepper, chives and crackers

Chop the onion small and soften the cream cheese

The onion goes in raw, so the size of the pieces matters. Big chunks stay crunchy and sharp after 25 to 30 minutes in the oven, while a fine chop softens into the cheese and gives a mellow sweetness through every bite. Take a few extra minutes with the knife here. Measure the onion after chopping so you end up with a full 2 cups.

The cream cheese needs to be soft before you start stirring. Cold cream cheese breaks into little white lumps that never fully melt into the mayonnaise, and you end up with streaks in the finished dip. Set the 4 oz block on the counter while you cook the bacon and chop the onion, and it should be ready by the time you mix.

Why some bacon stays out of the bowl

Six slices of bacon get cooked crisp and crumbled, but not all of them go into the mix. Most of the bacon bakes inside the dip, where it softens and seasons the cheese. Keep a spoonful back for the top. Added after baking, those last crumbles stay crunchy, so every scoop gets a bit of texture against the creamy base. Cook the bacon properly crisp at the start, since it will not crisp any further once it is buried in cheese.

How to make hot bacon Swiss onion dip

  • Heat the oven to 375°F and grease a 1 1/2 quart baking dish. Greasing helps the browned edges release when guests scrape the sides.
  • In a bowl, stir together the onion, Swiss cheese, mayonnaise, cream cheese, black pepper and most of the bacon until everything is combined. Look for an even mixture with no pockets of plain cream cheese.
  • Spread the mixture in the prepared dish and sprinkle the Parmesan over the top. An even layer bakes evenly, so smooth it out to the corners.
  • Bake for 25 to 30 minutes, until the dip is bubbling and golden brown on top. The bubbles around the edges tell you the center is hot; the color tells you the Parmesan has formed its crust.
  • Let the dip rest for 5 minutes. Top with the rest of the bacon and the chives, then serve with crackers or toasted baguette slices.

Don’t skip the 5 minute rest

Straight out of the oven, the cheese is at its runniest and a cracker dipped right away can pull up a long, oily string. Five minutes on the counter lets the dip settle so it clings to whatever you scoop with. It is still plenty hot after the rest, and that short wait is also the right moment to scatter the saved bacon and the chives over the top.

Serving it at a party

Set the baking dish on a board or trivet in the middle of the table with crackers and toasted baguette slices around it. Sturdy crackers hold up best, because the dip is thick and the Parmesan crust needs a little pressure to break through. Baguette slices that have been toasted until firm work the same way and give you something to swipe the golden edges with.

One 1 1/2 quart dish makes 10 servings, which covers a small gathering on its own. For a bigger holiday table, it fits well next to other bacon bites and a cold dip or two, so guests have a mix of warm and cool things to pick from. Since the recipe is written to be eaten hot, plan to bake it so it comes out close to when people start arriving.

Hot bacon Swiss onion dip FAQs

Does the bacon need to be cooked before it goes in?

Yes. The recipe calls for the 6 slices to be cooked crisp and crumbled first. The dip only bakes for 25 to 30 minutes at 375°F, and inside all that cheese raw bacon would not cook through or crisp.

How do I know when the dip is done?

Watch for two signs together: the dip should be bubbling, especially around the edges, and the top should be golden brown. If it is bubbling but still pale at 25 minutes, give it the extra few minutes up to 30.

What size dish should I use?

A 1 1/2 quart baking dish. That size gives the right depth, so the top browns in the baking time while the middle heats through and stays creamy.

Why is the Parmesan sprinkled on top instead of mixed in?

On the surface, the grated Parmesan browns and forms the golden crust. Stirred into the mix, it would simply melt into the other cheeses and you would lose that contrast between the crisp top and the soft dip underneath.
