Banana Split Fluff

EVERYDAY TABLE  ·  Nov 6, 2026

A banana split from the ice cream shop is a full-sugar treat, and so is this banana split fluff. It brings the whole sundae into one big bowl: vanilla pudding, fluffy whipped topping, pineapple, strawberries, chocolate chips and walnuts, finished with chocolate syrup and cherries. Make it for the days when the whole family shows up and nobody is counting anything.

Timing is the trick. The bananas go in at the very last minute, right before the bowl hits the table, so they stay pale and never sit browning in the fridge.

You need one big bowl, a whisk, a spatula and a clear shelf in the fridge. Hands-on time is about 15 minutes, plus 1 hour of chilling. The oven stays off, which helps in summer when nobody wants the kitchen any hotter.

What goes into banana split fluff

  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 cup cold whole milk
  • 1 tub (8 oz) whipped topping, thawed
  • 1 can (20 oz) crushed pineapple, well drained
  • 1 1/2 cups sliced fresh strawberries
  • 3 ripe bananas, sliced
  • 1/2 cup mini chocolate chips
  • 1/3 cup chopped walnuts
  • 2 tbsp chocolate syrup, for topping
  • 10 maraschino cherries, for topping

Each item plays a part from the ice cream shop version. The instant vanilla pudding mix stands in for the vanilla ice cream and sets the base. Whipped topping is the fluff itself; thaw it in the fridge so it folds in smoothly. Crushed pineapple and strawberries are the classic banana split toppings, brought together in one bowl. Mini chocolate chips are small enough to land in every spoonful, and the chopped walnuts give the crunch a sundae gets from its nut topping. Chocolate syrup and maraschino cherries are the finish, since a banana split needs its cherry on top.

How to make it

  • Make the base. Whisk the 3.4 oz box of instant vanilla pudding mix with 1 cup cold whole milk for 2 minutes until thick.

  • Add the fluff. Fold in the 8 oz tub of thawed whipped topping until smooth. A spatula and a gentle hand keep the air in.
  • Add the mix-ins. Fold in the well-drained crushed pineapple, 1 1/2 cups sliced fresh strawberries, 1/2 cup mini chocolate chips and 1/3 cup chopped walnuts.

  • Chill, then add the bananas. Cover and refrigerate for 1 hour. Right before serving, slice the 3 ripe bananas and fold them in so they stay pale.

Keeping the fluff thick and the bananas pale

Fluff salads usually fail in one of two ways: the bowl turns watery, or the bananas go brown and slimy before anyone takes a scoop. A few small habits prevent both.

Drain the pineapple properly

The recipe calls for a 20 oz can of crushed pineapple, well drained, and the “well” matters. Tip it into a fine sieve and press it with the back of a spoon until it stops dripping. Any extra juice thins the pudding base and pools at the bottom of the bowl after the hour in the fridge.

Thicken the pudding first

Give the pudding mix and cold whole milk a full 2 minutes of whisking before anything else goes in. That set pudding holds the whipped topping up, so the fluff stays airy and scoopable. Cold milk sets faster, so pour it straight from the fridge.

Bananas go in last

Sliced bananas brown fast once they meet air. The other fruit, the chips and the walnuts chill with the base for an hour, and the bananas get folded in only right before serving. Pick bananas that are yellow and ripe with few brown spots; very soft ones break apart when you fold.

Small changes that still work

Skip the walnuts if someone at the table has a nut allergy. For a crowd that likes to help themselves, keep the chocolate syrup and cherries on the side and let everyone top their own scoop. You can also spoon the finished fluff into small cups for a party table so nobody digs into a shared bowl.

A full-sugar dessert, by design

Banana split fluff is built on instant vanilla pudding mix, whipped topping, canned pineapple, ripe bananas, chocolate chips, chocolate syrup and maraschino cherries. That is sugar from several directions, so it is neither keto nor low-carb. The recipe spreads the same family of ingredients as a regular banana split across 12 servings in one bowl. If you track carbs, enter the exact products you buy into your app, since we do not print a number we cannot back up.

It fits a birthday table, a summer cookout or any party where it sits beside savory food. A crisp green salad, grilled vegetables, deviled eggs or burgers all make good neighbors. Set out a plain bowl of fresh strawberries too, so anyone skipping the fluff has something sweet to reach for.

Leftovers and working ahead

Banana split fluff is best the day you make it, within a few hours of adding the bananas. Leftovers keep in a covered container in the fridge, though by the next day the bananas darken and the base softens a little. It still tastes good and looks less pretty.

Freezing does not work well here. Whipped topping desserts with fresh fruit tend to weep and turn watery as they thaw, and the bananas suffer most. Serve it cold, straight from the fridge.

To work ahead, make the base with the pineapple, strawberries, chips and walnuts and keep it chilled. Hold the bananas, syrup and cherries until serving time.

More bowls for a crowd: the pineapple cheesecake fluff salad uses the same drained-pineapple trick, the lemon blueberry fluff salad brings a brighter, tangy version, and the Christmas cherry pineapple salad suits the holidays. If you have extra bananas, try these mini banana pudding cheesecakes .

Banana split fluff questions

How far ahead can I make it?

At least 1 hour ahead so it can chill. Keep the bananas, chocolate syrup and cherries aside until right before serving.

Why did my fluff turn watery?

Usually the pineapple was not drained well enough, or the pudding did not get its full 2 minutes of whisking before the whipped topping went in.

Can I use a larger bowl of fruit?

We have only made it with the amounts on the card. Adding more fruit, especially juicy fruit, can thin the base, so stick to the listed quantities for a fluff that holds its shape.

Is banana split fluff keto?

No. The pudding mix, fruit, chocolate syrup and cherries all bring sugar. We have not tested a low-carb version of this recipe, so we are not offering one built on guesses.
