This is a single-serving cake made in a mug and cooked in the microwave in 60 to 90 seconds. The batter is almond flour, an egg, almond milk and melted butter, sweetened with erythritol and flavored with cinnamon and vanilla. While it cooks you mix a second cinnamon and erythritol blend to sprinkle over the warm cake, which is what gives it the churro flavor. Prep is 5 minutes, and the total comes to 6 to 7 minutes.

Save this recipe for later:

It has 4 grams of carbohydrates and no sugar, so it fits a keto diet. There is no pan to wash and no oven to heat, so it suits an evening craving.

What Goes in the Mug

The full amounts are in the recipe card at the bottom. This is what each ingredient does.

  • Almond flour (1/4 cup): a low-carb base that makes a fluffy cake without regular flour.
  • Erythritol (2 tablespoons): the sweetener, with no carbohydrates. Use your preferred keto sweetener if you like.
  • Baking powder (1/2 teaspoon): helps the cake rise.
  • Cinnamon (1/4 teaspoon) and salt (1/8 teaspoon): the cinnamon gives the churro flavor and the salt balances the sweetness.
  • Egg (1 large): gives structure and moisture.
  • Unsweetened almond milk (2 tablespoons): keeps the cake moist.
  • Melted butter (1 tablespoon) and vanilla extract (1/2 teaspoon): the butter adds richness and the vanilla rounds out the flavor.
  • Cinnamon sugar topping: 1 tablespoon of erythritol mixed with 1/2 teaspoon of cinnamon.

Cooking It in the Mug

Mix the dry ingredients in a microwave-safe mug, then add the egg, almond milk, melted butter and vanilla and stir until smooth. Use a sturdy mug, and pick a larger one so the cake has room to rise without overflowing. A small microwave-safe bowl can replace the mug.

Microwave on high for 60 to 90 seconds. Microwaves differ, so start with 60 seconds and check. If yours has a higher wattage, you may need slightly less time. The cake is done when it is set but still moist in the center.

While it cooks, mix the erythritol and cinnamon for the topping in a small bowl. Let the cake cool for a minute, then sprinkle the topping over the warm cake and serve it straight away.

Ways to Change It

  • Chocolate chips: fold a tablespoon of sugar-free chocolate chips into the batter before microwaving.
  • Nuts or seeds: a tablespoon of chopped walnuts, pecans or sunflower seeds adds crunch.
  • Extracts and spices: a splash of almond or coconut extract, or a pinch of nutmeg.
  • Chocolate sauce: drizzle sugar-free chocolate sauce on top.
  • Whipped cream: add a dollop of sugar-free whipped cream.

What to Serve With It

Sugar-free whipped cream adds a creamy contrast to the warm cake. A small handful of raspberries or strawberries adds flavor, but keep the portion small to stay within your carbohydrate limit. Coffee or herbal tea goes well with it, and a cinnamon-spiced tea strengthens the churro flavor.

Making Ahead and Leftovers

The cake is best fresh, but you can mix the dry ingredients ahead and keep them in an airtight container. When you want a cake, add the wet ingredients and microwave.

Leftovers keep in an airtight container in the refrigerator for up to two days. Reheat in the microwave for about 15 to 20 seconds.

FAQ

Can I make it in advance?

It is best fresh, but you can prepare the dry ingredients in advance and store them in an airtight container. Add the wet ingredients when you are ready and microwave.

Can I use something other than almond flour?

Coconut flour works. It is more absorbent, so use about one-third of the amount and add a little more liquid. A store-bought low-carb flour blend is another option.

How long do leftovers keep?

Up to two days in an airtight container in the refrigerator. Reheat in the microwave for about 15 to 20 seconds.
