These are no-bake truffles made from pumpkin puree, almond flour, powdered sugar and pumpkin pie spice, chilled until firm, rolled into 1-inch balls and dipped in melted dark chocolate. Crushed graham crackers go on top while the chocolate is still wet. The recipe makes 12 truffles and takes 1 hour 30 minutes in total, most of it chilling time. There is no oven involved.

What Goes in the Truffles
The full amounts are in the recipe card at the bottom. This is what each ingredient does.
- Pumpkin puree (1 cup): adds moisture and the pumpkin flavor.
- Almond flour (1 cup): gives the dough its body and a good texture.
- Powdered sugar (1/2 cup): sweetens the dough and keeps it smooth, with no granules.
- Pumpkin pie spice (1 teaspoon), salt (1/4 teaspoon) and vanilla extract (1/2 teaspoon): the spice brings the fall flavor, the salt balances the sweetness, and the vanilla rounds out the pumpkin.
- Dark chocolate chips (1 cup) and coconut oil (1 tablespoon): melted together for the coating. The coconut oil helps the chocolate melt smoothly and gives a glossy finish.
- Crushed graham crackers (1/4 cup): a crunchy topping with a nod to pumpkin pie.
Getting the Dough to Roll
Mix the pumpkin, almond flour, powdered sugar, spice, salt and vanilla in a large bowl until a soft dough forms. Refrigerate it for about 30 minutes. This makes rolling much easier. If the dough still feels sticky, chill it for another 15 to 20 minutes.
Roll the chilled dough into balls about 1 inch across and place them on a parchment-lined baking sheet. A silicone baking mat works if you have no parchment.
Dipping and Setting
Put the chocolate chips and coconut oil in a microwave-safe bowl and microwave in 30-second intervals, stirring in between, until smooth. A double boiler also works, and so does a heatproof bowl set over a pot of simmering water. It melts the chocolate more gently and keeps it from burning.
Dip each ball into the chocolate until fully coated, lift it out with a fork, and let the excess drip off before putting it back on the baking sheet. A slotted spoon can stand in for the fork. While the chocolate is still wet, sprinkle crushed graham crackers on top. Refrigerate the truffles for at least 1 hour so the chocolate sets.

Ways to Change Them
- Heat: add a pinch of cayenne pepper, or an extra 1/2 teaspoon of pumpkin pie spice.
- Chocolate: use white or milk chocolate for a sweeter coating.
- Crunch: mix chopped walnuts, pecans or pumpkin seeds into the dough.
- Decoration: drizzle melted chocolate over the tops, sprinkle with chopped nuts or edible glitter, or for Halloween add candy eyes or use colored chocolate melts.
What to Serve With Them
Herbal tea or a sugar-free pumpkin spice latte suits them well. A spinach salad with feta, walnuts and a light vinaigrette gives a fresher contrast to the sweet truffles, and creamy pumpkin soup repeats the fall flavors.
Storing and Freezing
Stored in an airtight container in the refrigerator, the truffles keep for up to a week. Keep them chilled so they hold their texture.
To freeze them, set them in a single layer on a baking sheet until frozen, then move them to an airtight container. They keep for up to three months in the freezer. Thaw them in the refrigerator before serving.

Pumpkin Patch Truffle Balls: Indulge in Fall Flavor!
Ingredients
Instructions
In a large mixing bowl, combine the pumpkin puree, almond flour, powdered sugar, pumpkin pie spice, salt, and vanilla extract. Mix until well combined and a dough forms.
Refrigerate the mixture for about 30 minutes to firm it up, making it easier to roll into balls.
Once chilled, use your hands to roll the mixture into small balls, about 1 inch in diameter. Place the rolled balls on a parchment-lined baking sheet.
In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
Dip each truffle ball into the melted chocolate, ensuring it is fully coated. Use a fork to lift it out and let any excess chocolate drip off before placing it back on the baking sheet.
While the chocolate is still wet, sprinkle the tops with crushed graham crackers for a decorative touch.
Once all the truffles are coated, refrigerate them for at least 1 hour to set the chocolate.
Notes
For a spicier flavor, add an extra 1/2 teaspoon of pumpkin pie spice or a pinch of cayenne pepper to the mixture.
Substitute the dark chocolate with white chocolate or milk chocolate for a different flavor profile.
