Pizza chips are a flour dough seasoned with garlic powder and Italian seasoning, rolled thin, cut into squares or triangles and baked with mozzarella and Parmesan on top. You dip them in marinara. Because the dough is rolled to about 1/8 inch, the chips bake up crisp. Prep takes 15 minutes, baking takes 10 to 12, and the recipe serves 4.

Pepperoni is optional. The dough is made with water and olive oil, so there is no yeast and no rising time.
What Goes Into the Chips
Amounts are in the recipe card at the bottom. Here is what each part does.
- All-purpose flour (1 cup): the base of the dough, which gives it structure and crunch.
- Baking powder (1 teaspoon): lets the chips rise slightly.
- Garlic powder (1/2 teaspoon), Italian seasoning (1/2 teaspoon) and salt (1/2 teaspoon): the pizza flavor.
- Water (1/4 cup) and olive oil (2 tablespoons): bind the dough and add richness.
- Mozzarella (1 cup, shredded) and Parmesan (1/4 cup, grated): the mozzarella melts on top, and the Parmesan adds a sharp, salty taste.
- Marinara sauce (1/2 cup): the dip.
- Sliced pepperoni (1/4 cup, optional): a meaty topping.
Rolling and Baking
Heat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Stir the dry ingredients together, then add the water and olive oil and mix until a dough forms. If it is too sticky, work in a little more flour.
Roll the dough out on a floured surface to about 1/8-inch thickness. Cut it into small squares or triangles with a pizza cutter or knife. The shapes do not need to be perfect, but cutting them evenly helps them cook at the same rate. Spread the pieces on the baking sheet, sprinkle on the mozzarella and Parmesan and add pepperoni if you are using it.
Bake for 10 to 12 minutes, until golden brown and crisp. Let the chips cool for a few minutes before serving with marinara.
- Watch the thickness. Thinner chips crisp faster, and thicker ones may need a few extra minutes.
- Use parchment. It stops sticking and makes cleanup easy. Lightly greased aluminum foil can stand in.
- No rolling pin? A clean wine bottle can roll the dough.
Variations

- Heat: add crushed red pepper flakes to the dough, or sprinkle them on top before baking.
- Vegetables: bell peppers, olives or mushrooms can go on or in the dough.
- Other cheeses: cheddar, gouda, feta or pepper jack can replace or join the mozzarella and Parmesan.
- Gluten-free: almond flour or coconut flour can take the place of the all-purpose flour.
- Dairy-free: leave out the cheese and add nutritional yeast for a cheesy flavor.
What to Serve With Them
Marinara is the classic dip, and ranch dressing, garlic aioli and spicy salsa also work. Raw celery, carrots and bell peppers with ranch make a crunchy side. A salad of mixed greens, cherry tomatoes and cucumbers with olive oil and vinegar gives a light contrast, and sparkling water with lemon or lime suits the savory chips.

FAQ
Can I make the chips ahead of time?
You can make the dough and cut the chips in advance. Keep them in an airtight container in the fridge for up to 24 hours, then add the cheese and toppings just before baking.
How should leftover chips be stored?
Keep them in an airtight container at room temperature to hold the crunch. Avoid the refrigerator, which can make them soggy.
How can the chips be made spicier?
Add crushed red pepper flakes to the dough or on top before baking. Spicy pepperoni or jalapeños also add heat.
