Cauliflower florets are dipped in buttermilk, rolled in seasoned flour, dipped again, then coated in panko and cooked in the air fryer at 400°F. The result is a crunchy shell around tender cauliflower, ready in about 30 minutes (15 minutes of prep, 15 minutes of cooking) and enough for 4 servings.

The recipe depends on the coating. The buttermilk makes the flour stick, the second dip makes the panko stick, and a light spray of oil is what browns the outside without deep frying.

What Goes Into the Coating

The amounts are in the recipe card below. This is what each ingredient does.

  • Cauliflower: 1 head, cut into bite-sized florets. Try to keep the pieces a similar size so they cook at the same rate.
  • All-purpose flour: the first layer, mixed with garlic powder, onion powder, smoked paprika, salt and black pepper.
  • Buttermilk: the glue between layers. It also keeps the cauliflower moist inside.
  • Panko breadcrumbs: a Japanese-style breadcrumb that is lighter and crispier than regular crumbs, which suits the air fryer.
  • Olive oil: drizzled over the bites when they come out of the basket.
  • Cooking spray: a light spray over the coated bites before they go in, so they brown.

Getting the Crust Right

Whisk the dry spices into the flour first, then set the buttermilk in a separate bowl. Each floret goes into the buttermilk, drips off the extra, and gets rolled in the flour mixture. Then it goes back into the buttermilk and into the panko. Press the crumbs on gently so they hold.

A few things matter more than the rest:

  • Coat every floret fully. A thin patch of flour or panko is where the crunch is lost.
  • Keep them in a single layer. Crowding the basket stops the air from circulating, and the bites come out softer.
  • Shake the basket halfway through the 12 to 15 minutes, until the bites are golden brown and crisp.
  • Use the spray. A light coat of cooking spray helps the panko color.

No Air Fryer

You can bake them instead. Spread the coated florets on a baking sheet lined with parchment paper and bake at 425°F for about 20 to 25 minutes, flipping halfway through.

Ways to Change Them

  • Cheese: mix grated Parmesan into the panko before coating.
  • Heat: toss the cooked bites in hot sauce right after air frying, or add cayenne to the flour mixture.
  • Herbs: stir fresh rosemary or thyme into the flour mixture, or Italian herbs for a different direction.
  • Gluten-free: use almond flour in place of the all-purpose flour, and gluten-free panko.

What to Serve With Them

Dips are the obvious choice: ranch, guacamole, spicy aioli, a tangy yogurt dip or marinara all work. A side salad dressed with olive oil and vinegar gives a crisp, fresh contrast to the fried coating, and avocado can go in the salad. Sparkling water or herbal tea are easy drinks to put alongside.

FAQ

Can I use frozen cauliflower?

Yes, but thaw it and drain it thoroughly before coating. Extra moisture keeps the coating from crisping.

How long do leftovers keep?

Keep them in an airtight container in the refrigerator for up to 3 days. Reheat them in the air fryer for a few minutes to bring back the crunch.

Can I make the bites ahead?

You can prep the cauliflower and coat it in the flour mixture ahead of time. Keep it in the fridge until you are ready to air fry.

What dipping sauces go well with them?

Ranch dressing, guacamole, spicy aioli, a tangy yogurt dip or classic marinara.

How can they be made spicier?

Add cayenne pepper to the flour mixture, or toss the cooked bites in hot sauce right after air frying.
