Cabbage steaks are thick slabs cut straight through a head of green cabbage, brushed with garlic oil and roasted at 400°F until the edges turn golden and crisp and the middle stays tender. One large head makes 4 steaks, and the whole thing takes 40 minutes, with 10 of those for prep.

The oil is what does it. Brushed generously over both sides, it lets the cabbage caramelize in the oven and form crisp edges.

What You Need

The amounts are in the recipe card at the bottom.

  • Green cabbage (1 large head): a sturdy base that holds together when roasted.
  • Olive oil (1/4 cup): mixed with the garlic and brushed over both sides.
  • Garlic (4 cloves, minced): the main flavor, along with salt and black pepper.
  • Smoked paprika (1 teaspoon, optional): adds a smoky note to the oil.
  • Balsamic vinegar (1 tablespoon, optional): drizzled over the steaks before serving for a tangy finish.

Cutting the Steaks

Take off the outer leaves, then trim the base so the cabbage sits flat. Slice it into steaks 1 inch thick. A sharp chef’s knife gives clean cuts and keeps the steaks intact. A serrated knife also works if that is what you have. Cutting them evenly means they cook at the same rate.

Roasting

Mix the olive oil, garlic, salt, pepper and paprika if you are using it. Set the steaks on a baking sheet lined with parchment, brush both sides generously, and roast for 25 to 30 minutes, flipping them halfway. They are done when the edges are golden brown and the cabbage is tender.

If you have no parchment, aluminum foil can stand in, but grease it lightly. A shallow roasting pan can replace the baking sheet.

Ways to Change Them

  • Heat: add red pepper flakes to the garlic oil.
  • Cheese: sprinkle grated Parmesan on top during the last 5 minutes of roasting.
  • Herbs: stir chopped thyme or rosemary into the garlic oil before brushing.
  • Other spices: cumin or chili powder in the oil change the flavor.
  • Other cabbage: red cabbage or Savoy can replace the green.

What to Serve With Them

They suit grilled chicken or fish, and they also work as a light dinner on their own. Cauliflower rice is a low-carb base for any juices from the main dish. For a drink, sparkling water with a squeeze of lemon. If you want something to dip them in, ranch dressing, garlic aioli or chimichurri all work.
